I saw this quote over the weekend and, initially, I thought..."how sad and probably so true for many" but then I thought, what an inspirational quote...we have the power to change at any time. What a gift! We are the authors of our own stories! We create our reality. It really is that simple. We dramatize CHANGE because of fear of imperfection, fear of failure, etc...FEAR is the opposite of power so it should be our goal as human beings, on a daily basis, to take control...overcome our fears with our beautiful human power. We are here for such a short time. 

How many fun memories to you regret? None.

Another quote that pulled me is "if you want to know where your heart is...go where the mind wanders..." It's so damn true. All your dreams and aspirations are your so-called "mental happy place" so WHY NOT GO MAKE THEM HAPPEN instead of pretending? Don't be an amateur. Be a pro! Kohlrabi and Apple Salad:

3 tbs olive oil

2 tbs white wine vinegar

1 tsp Dijon mustard

2 small heads frisée  torn into bite size pieces (6 cups approx)

1 pink lady apple thinly sliced

4 tbs chopped chives

Whisk ingredients together. Caraway seeds a great optional topper!

Kohlrabi is a member of the cabbage family. Cooking reveals it sweeter side...raw it compares in taste to broccoli. Choose smooth medium bulbs. Trim fibrous outer layer from bulb. 

Kohlrabi dresses great with fresh lemon juice, olive oil, sea salt, dill, and feta cheese...nummy!
