HAPPY-MEAL REPLACEMENT

2 tpbs Maca Powder

1 tbs unsweetened cocoa

3 large grapefruits

1-2 lemons

1/2 cup water

1/2  tsp. stevia or 1/2 stevia packet

TURMERIC LEMONADA (LIQUID (NATURAL) PROZAK)

 

  1. 4 inches fresh turmeric
  2. 2.5 inches fresh ginger
  3. 1 cup cold filtered water
  4. 1 cup freshly squeezed lemon juice (about 6-7 lemons)
  5. 4.5 tbs coconut sugar or 3 tbs honey
  6. 12 oz sparkling water (La Croix or Peligrino or even Club Soda)

Step by Step:

  1. Peel turmeric and ginger and chop into tiny pieces. Put in small saucepan with one cup of water and get to a boil. Reduce heat a bit, and simmer for about 8-10 minutes.
  2. Slow press your lemons or fresh squeeze.
  3. Strain turmeric/ginger pieces put back in  saucepan. Add in coconut sugar or honey and stir.
  4. Combine sweetened turmeric/ginger liquid with lemon juice and stir well. Add in sparkling water.
  5. Pour over ice.  garnish with mint or basil (optional)

Hand full of basil leaves
2 clove of saute garlic
1 cup olive oil
Pinch salt & pepper

Blueberry Jam.
1 cup of fresh blueberrys
2-3 cup of white wine
1/2 table spoon sugar

Bring 1/2 cup of heavy cream to a boil in the hot pan and add 1/2 tea spoon of pesto sauce and 1 cup of blueberry jam. Than put the smoke salmon on the top of jam.

Finish the dish with mango and apple salsa

4 blood oranges

  • 32 oz boiling water

Directions

DON'T put olive oil into your juicer. Place the olive oil into a glass, then pour the juice onto it and stir to mix well.

COMFORT CALZONES (not healthy but nummy)

I bought dough premade but go nuts if you want to make your on! 

Spray a large casserole dish with olive oil.

Stretch your dough into your desired amount of calzones...I did 3 for my little peeps.

Lay them out in the pan...and then begin the fun!

I poured homemade tomato sauce (tomatoes right from my porch garden:), then I put fresh shredded mozzarella, fresh picked basil, garlic, pepperoni, etc)

If I had made them for MOI, I would've put in Canadian bacon (French Canadian, that is...gheesh), pineapple, mozzarella & sauce.  Smells like college!:) YUM

Fold over other half of dough over your creation pile and use a fork to press edges together/seal it up.  Bake at 450 degrees for 15 minutes...presto-yummo!

 3 medium (about 1 1/2 pounds) tomatoes, cut into large pieces

  • 7 celery stalks, each cut into 3-inch pieces
  • 1/2 pound carrots, each cut into 3-inch pieces (do not peel)
  • 1 piece fresh horseradish, (2 1/2 by 1/4 inches), peeled (or 2 1/2 teaspoons prepared horseradish)
  • 1/4 teaspoon coarse salt
  • 2 1/2 teaspoons freshly squeezed lemon juice, plus lemon wedges, for serving

 

  1. Working in batches, press the tomatoes, celery, carrots, and horseradish through an electric juicer into a large bowl. Stir in salt and lemon juice. Pour vegetable mixture through a fine sieve into another large bowl or a pitcher. Divide vegetable juice evenly between 2 glasses. Serve each with a lemon wedge.

Grapefruit DETOX TONIC

  • 2 chopped grapefruits (peel and pith removed)
  • 5 chopped carrots
  • 1 inch fresh ginger, peeled and chopped
  1. Press grapefruits, carrots, and ginger through a juice extractor. Stir and serve immediately.

Green Hump Day Cleanse J

  • 1/2 head broccoli (or 6 leaves kale), chopped
  • 1 cucumber, chopped
  • 4 stalks celery, chopped
  • 1/4 cup fresh parsley sprigs
  1. Press all ingredients through a juice extractor. Stir and serve immediately.

1 Yoplait low fat Lemon yogurt

Blend ingredients in vitamix or blender and enjoy!  My favorite new lunch treat!

TIP:  Adding 1/2 cup coffee can give it a little kick if you have a long day ahead!:)

 

 

Hummus Deviled Eggs:

Ingredients

  • 6 eggs
  • 1/3 cup+1 Tbsp Bobby's Homemade Hummus
  • 2 Tablespoons Olive Oil
  • ¼ tsp freshly ground pepper
  • ¼ tsp salt
  • 3 teaspoons relish
  • Paprika for garnish

 12 Servings

  1. Place eggs in pot and cover with cold water. Bring to a boil over high heat. Turn off the heat and let sit for 10+ minutes. Remove with a slotted spoon and run cold water over the eggs. Cool eggs 10-15 minutes.

  2. Remove shells when cool. Cut in half and scoop out the yolk and reserve in Vitamix or food processor. Repeat with the remaining 5 eggs.

  3. Add hummus, olive oil, pepper, salt to the yolks and puree in the Vitamix. Add the relish and pulse 3-5 times to incorporate..

  4. Put the yolk mixture in a piping bag. (Use a tall glass and fold the edges of the piping bag over the glass to make it easier to transfer the mixture.) Pipe about a teaspoon of the mixture into each of the egg white halves and sprinkle with paprika.

Bobby's Homemade Hummus:

2 cans chickpeas (I use Kroger brand) better texture if you de-shell (My son, Bobby, loves to do this and it creates a nice lesson in cooking for him and great bonding time)

1/2 clove garlic chopped

1-2 lemons juiced or squeezed

Add olive oil until desired texture

Paprika for garnish.

Blend in Vitamix or blender and enjoy!

I love chopping some red pepper and jalapeno to add in for a little flare and fun color.

Kimberly's Detox to Retox Green JUICE:

Ingredients:

  • 3 large handfuls of spinach
  • 1 medium cucumber
  • ¼ quarter pineapple
  • 1 yellow delicious apple
  • 2 stalks of celery
  • 1 inch segment of ginger
  • ½ lime

Directions:

Wash and prepare the fruit and vegetables. Add in the spinach first followed by the celery and ginger. Make sure to just put the fruit part of the pineapple not rind, and add in followed by the apple and cucumber.


Kimbeetymint Juice

4-5 medium carrots

½ beet

Add Mint to taste

Directions:

Wash and prepare the ingredients as you typically and in accordance to what works best in your particular juicer. Add your desired amount of mint first so the more productive beet and carrot push the mint juice through. Add more mint after if needed.


Coconut Sesame Rice

Ingredients:

    1 cup white basmati rice (rinsed)
    4 tablespoons ghee
    2 cups water
    1 teaspoon celtic salt
    1/4 cup sesame seeds
    1/4 cup unsweetened shredded coconut

Instructions:

Place in a rice cooker:
1 cup rinsed white basmati rice, 2 tablespoons melted ghee. Mix well. Add 2 1/2 cups water and 1 teaspoon celtic salt.

Cover, turn rice cooker ON, and let rice cook. When rice is cooked, remove cover and fluff.

Place 2 tablespoons ghee in a skillet over low heat. Add 1/4 cup sesame seeds and 1/4 cup unsweetened shredded coconut. Sauté, stirring continuously until darkened and fragrant.

Pour over cooked rice and toss to mix.

You want to juice but you're on a budget and are not ready to take the plunge on a $200+ juicer?  That's ok!

All you need is a blender and this little jelly strainer bag.  You can find these at most kitchen or hardware stores that sell kitchen appliances. They cost $ 4.99 for 2 bags.  Just buy the bags.

To clean the bags, just use some dish soap and rub the bag together till it’s clean and all the soap is off the bag. Then air dry.  These bags should last quite a while.
